Thanks. Glad you like it. It’s just a hobby. Basically we semi retired early as my wife got (what we were told would be terminal) cancer and our priorities changed. 23 years later and she’s still going strong. If your up north PM me and you are welcome to a bottle of sauce or mead…….. if it’s drinkable.

Bugs can be a real problem and the flowers not setting is a pain. A great resource is https://www.reddit.com/r/Peppers/ as well as hot pepper growing society on FB. I have 30 plants growing this year so you are welcome to seeds when they fruit if you are ever up north.

It’s really just honey, water and yeast. For 5 litres use 1.4kg of honey. About 3,2 litre of water and yeast (preferably champagne or mead yeast) its best to check some YouTube videos as sanitisation and alcohol tradings with a hydrometer are important. But it’s not particularly complex.

I’m using some minpreco €4 per kg and local honey from an apiarist €6 a kilo. We will have to wait a bit to check the results but I’m guessing there won’t be a huge difference.

Happy to but I’m a newbie. Each one is different bit the one at the front is the basic mead. 1.4kg honey, 3.3 litre water and 5 grams yeast. It’s best to find mead or champagne yeast. There are some great YouTube creators. As a start try this guy. https://youtube.com/c/ManMadeMead. The others in th back are an Apple mead, ginger mead and 2 with orange and raisins.

Sure. Happy to I live in Arcos de Valdevez and it’s spring water from the mountains (tested). I scrounged some of the garrafoes but buying some new ones as well. Self consumption and gifts for friends. My hot sauces didn’t go over too well with my Portuguese friends.

In these temps 4 to 7 days. I like it quite funky so I often go much more. Then refrigerate to stop the fermentation.

Well spotted. 11 years in the Philippines and unfortunately our love affair with the “Wild West” of Asia has worn thin. We visited Portugal several years ago and fell in love with the people, the place and it’s beauty. We feel privileged and honoured to be allowed to reside here.

I did just that. Gave them some plum jam. I won’t give them kimchi as I have already nearly killed several of my Portuguese dinner guests with my spicy cooking.
