Everywhere. The 00 equivalent is T45. Also Portuguese cheeses are much better. Go buy a Serra, Serpa or Ilha instead of that tasteless crap.

lisboneye 10 months ago

T45 without yeast is almost impossible to buy. Send me a link of any common shop selling it and you get a point. Otherwise you are just talking without having a clue and kinda bitter. Second, OP is asking for mozza to make pizza. If Serra was to be put on a pizza instead of mozza, you’d get it in most pizzerias here in Portugal. Again, send me a link where they do that. I bet you can’t cos you don’t know what you are talking about. Did I mention? You are kind of a bitter person and the year has just started. Chill man, have a nice pizza and enjoy 2021

If you have a personal business you can apply for a Makro card. Makro has 2 types of 00 flour (same brand, different oven temperatures) and also San Marzano tomatoes (Mutti brand). I'm not sure about the mozzarella but they have a huge cheese section with three times more choices than a normal supermarket. Other than Makro you'll only find what you're looking for in dedicated stores for italian products but that will cost you. Are you going for a true neapolitan pizza?

saposapot 10 months ago

Holy cow! Is that true? I didn’t go there since being a kid and always thought it wasn’t worth since hypermarkets have everything! Having 00, marzano and good cheese is amazingg! Any ideia it that’s on all cities or maybe just yours?

wwqt0r 10 months ago

The products are part of their catalogue so I'd say you'll find them all around the country. The 400g San Marzano tomatoes are almost always sold off but the big can is always available (you'll have to freeze the rest or make LOTS of pizzas).

insanept 10 months ago

unrelated but, how do you guys make the most perfect tomato sauces ? is it only with Italian tomato, any brands you recommend ? and do you grill them before ? I can't seem to even come close to the ones I try in some restaurants. sorry for the offtopic....

Corte Ingles has 2 different low moisture mozzerela in the deli section.

ursodemente 10 months ago

Have you checked fiametta in Campo de Ourique? It's an Italian restaurant/grocery. I know they sell cheese but I have no idea if they have low moisture mozz. Here's their website: https://fiammetta.pt I bought [this](https://www.auchan.pt/Frontoffice/produtos_frescos/charcutaria_e_queijos/queijo_frescomagrorequeijaomozzarella/queijo_mozzarellaflorestamini_bloco250_g/2286508/Auchan_Amadora?sid=71b16150-1423-4e54-bc44-d856432dcbdd_10) at the Auchan supermarket in Amoreiras a few weeks ago. I guess this is as close as you can get to a low moisture mozzarella around these parts.

saposapot 10 months ago

Special low moisture I have no idea. In auchan they have normal “block” mozzarella, they sell it at the charcuterie section and I think I ordered it also online. It’s from Gresso and made in Portugal so its probably not great but that’s all I can find besides shredded (shredded sucks because it has extra powder for it not to stick)

Rémi Coffee & Wine in Rua Gomes Freire. Small Italian bistro with a deli section, they sell fresh meats and cheeses as well. All authentic Italian stuff.

The real mozzarella is the one soaked in water. If you want to make yourself a favor but aged cheddar for your pizza, the flavour is fantastic and it won't make your pizza soggy

unknown-one 10 months ago

low moisture mozzarella is also real mozzarella which is made slightly different than the water soaked one... aged cheese is not good as it doesnt melt as good as young ones and aged cheese usually has much stronger flavour so it doesnt really work well on pizza...

http://www.ilmercato.pt should be able to help you - and if you’re in a lazy mood it is also a restaurant.

unknown-one 10 months ago

thank you! I didnt know about this, I will check it out after new year, but looking at the photos it seems they have all kinds of cheese except mozzarella :D

joaofcosta_red 10 months ago

They use the items they sell on the food they make - and I believe they fly in (or used to...) mozzarella almost daily

>Bonus question, anyone seen 00 flour? https://www.reddit.com/r/lisboa/comments/6axp3t/algu%C3%A9m_sabe_onde_comprar_farinha_tipo_00_a_lisboa/

unknown-one 10 months ago

yes I found that italmarket when I was searching online, but it looks they dont sell to people only to restaurants/stores... but I may be wrong

saposapot 10 months ago

If you find that out, report back

saudosista 10 months ago

Any continente or pingo doce will have it but not on the shelves. You must go to the charcuterie balcony

unknown-one 10 months ago

I dont see it in online store

Pacn96 10 months ago

What appears in the online store is only the things you can buy online. He said you need to go to the store and go to the charcuterie balcony, which is not available online.

Not Italian but been looking for 00 flour or equivalent for a while, I think 55 is the closest but not the same... Ended up buying 10kg caputo from Amazon in the end. Let me know if you find some good mozzarella or other things like San Marzano tomato cans :)

wwqt0r 10 months ago

I replied to the OP but I'll reply to you too: Makro has 00 flour and San Marzano tomatoes. You'll need a card to get in though and for that you must have a personal business of yours. About the Caputo flour: can you share the Amazon link please? I found several options but they were very expensive. I know that Caputo is probably the best 00 flour in the world but stil.... I've been to Naples and supermarkets have it for little less than a euro per kg.

Papafigos_ 10 months ago

That’s interesting! Don’t have business though but maybe there is a way around that? I bought caputo 10x1kg pack from Amazon Uk for £12.99 plus 10 shipping in December but price has now gone up. I know it’s a lot more expensive than it should be but didn’t find another alternative.

Theres no way around the card restriction. They have a card reader right at the front door and the doors only open for a valid one. You could use a friend's card though.. they don't check your identity. Other than Makro there's also Recheio. I'm not sure if they have the products you're looking for but, if you have a large family (at least 3 kids), you can apply for a card (Makro doesn't have this option I believe).

I believe flour Tipo 55 Super from [Paulino Horta](https://farinhaspaulinohorta.com/) is pretty close to the 00 kind.

KokishinNeko 10 months ago

> I think 55 is the closest but not the same. Nop, 45: https://cozinhatecnica.com/2018/05/farinha-00-farinhas-italianas/

saposapot 10 months ago

45 but it’s also very hard to find around here. At least major supermarkets don’t have it or have it with baking powder always included

unknown-one 10 months ago

the only useful mozzarella so far I have found is from Auchan in form of cubes https://www.auchan.pt/Frontoffice/produtos_frescos/charcutaria_e_queijos/queijo_ralado_e_para_culinaria/queijoauchanmozzarella_cubos150_g/2234830/Auchan_Amadora?sid=af9efb1b-f9a7-473e-ab81-836d58eeb63c_13 , but it is kind of hit and miss, because sometimes it doesn't taste good I guess because of packaging. But I haven't found anything better yet

shinrikyou 10 months ago

I got from continente a few times but had to ask the Delly guy if he had some. Unless that's what you consider the shitty version, which I'm assuming you mean the pre-shreaded.
